Why the Same Oven Setting Bakes Differently on Different Days
Keep a short oven log. A single thermometer glance cannot describe a cycling oven.

Start with what you can observe.
Look for the pattern that matches your result before changing the recipe.
- Loading immediately after the beep: the oven walls may not yet be evenly heated.
- Different rack or tray load: airflow and radiant heat differ.
- One isolated thermometer reading: it may capture a normal heating cycle.

Continue the current bake according to its doneness cues, shielding an overbrowning surface where appropriate. Avoid repeatedly changing the dial in response to every temperature fluctuation. For a persistent large discrepancy, consult the appliance manual or a qualified service professional.

Make the change that matters.
- Use a consistent preheat routine and rack position.
- Keep pan, batch depth and ingredient starting temperatures comparable.
- Record several readings over time with a suitable thermometer, along with the actual baking result.

What's happening underneath.
An oven switches heat on and off around a setpoint. Air temperature, hot surfaces and airflow all influence baking. Door opening and a large cold load temporarily change conditions; ordinary cycling does not automatically mean the oven is faulty.
Do not recalibrate from one reading taken immediately after opening the door.

Will a fan setting use the same temperature?
Not necessarily. Follow the recipe's fan guidance or the appliance manual; airflow changes heat transfer and may require an adjusted setting.
