Why Your Cake Is Dry Even Though You Followed the Timing
Timing is a checkpoint, not a guarantee. Check flour weight, pan size and actual doneness.

01 / READ THE SIGNS
Start with what you can observe.
Look for the pattern that matches your result before changing the recipe.
- Dry edges with a moist center: the outside may have overbaked.
- Dry throughout: look for excess flour or a longer bake than needed.
- A thinner cake than expected: a larger pan may have shortened the useful bake time.
02 / RIGHT NOW
Can you save this batch?
A fully baked dry cake can be served with fruit, cream or a light brushing of syrup suited to the cake. Add gradually so the crumb does not become soggy. This changes serving texture; it cannot undo protein setting or restore the original crumb.
03 / THE NEXT ATTEMPT
Make the change that matters.
- Weigh flour using the recipe's own gram amount.
- Match pan material and dimensions as closely as possible.
- Begin checking near the early end of the stated window and record when your cake actually finishes.

04 / A LITTLE UNDERSTANDING
What's happening underneath.
Moisture is lost during baking, while flour and egg proteins set the crumb. Extra flour changes the balance; extra baking removes more water. A hot oven is one possibility, not a diagnosis that can be assumed without measurement.
Do not add extra oil to an untested formula before ruling out measurement and overbaking.
05 / ONE GOOD QUESTION
Should I refrigerate every cake?
Storage depends on the filling and frosting. Perishable fillings need refrigeration; a plain cake should be protected from drying according to its recipe.
