Why Your Sauce Stays Thin No Matter How Long You Cook It
Choose between reducing and thickening. Reducing an already salty sauce can make it worse.

Start with what you can observe.
Look for the pattern that matches your result before changing the recipe.
- Good flavor but too much volume: uncovered reduction may suit.
- Already concentrated or salty: consider a compatible thickener instead.
- Starch was added but never heated as directed: it may not have developed thickness.

For a sauce suited to starch, mix a small amount of cornstarch with cold water and whisk it gradually into the simmering liquid. Allow it to thicken before adding more. Alternatively, reduce uncovered in a wider pan while tasting regularly. The right method depends on whether flavor also needs concentrating.

Make the change that matters.
- Measure stock or water rather than pouring by eye.
- Keep the lid off during a reduction unless the recipe says otherwise.
- Check consistency at serving temperature; many sauces thicken as they cool.

Reduction removes water. Starch thickening holds water within a swollen structure. These methods can produce very different textures, and fat on its own does not automatically turn a watery liquid into a stable sauce.
Do not keep adding slurry before the previous addition has cooked and shown its effect.

Why did my thick sauce thin out again?
Some starches lose thickening power with prolonged heating or acidic conditions. Use the thickener and timing specified for that sauce.
